<p><strong>Ingredients</strong></p>
<ul>
<li>4 red onions, sliced thickly</li>
<li>3 eggplants, sliced thickly</li>
<li>1 Tablespoon ground sea salt</li>
<li>1/3 cup olive oil plus extra for grilling</li>

<p>Sprinkle eggplant slices with salt on both sides and place in a colander to drain for 1 hour.</p>
<p>Dry eggplant slices with paper towels.</p>
<p>Heat grill to medium high.</p>
<p>Brush onion slices and eggplant slices with olive oil on both sides and grill until tender with char marks on both sides, about 5-7 minutes per side.</p>
<p>Place nicest looking slices alternatively around the edge of a serving platter, attractively.</p>
<p>Chop the remaining onion slices and eggplant into large chunks and place in a large bowl.</p>
<p>Add basil, olive oil, balsamic vinegar and salt and pepper to a measuring cup. Toss 3/4 of dressing using all of the basil in the chopped vegetables and toss to coat well.</p>
<p>Add chopped seasoned vegetables to the center of the platter, mounding up attractively.</p>
<p>Drizzle remaining dressing over sliced vegetables on the side.</p>
<p>Keep at room temperature until ready to serve.</p>

			<content:encoded><![CDATA[<p>This amazing pizza was smoky, thin crusted and incredibly delicious. I made it with two types of toppings, the Hawaiian and a shrimp based one. See the bottom cooks note for the shrimp pizza toppings I used but the crust was the same.</p>
<p>I am thinking that this would make an amazing pizza party and I am thinking of who I can invite to that party as I type.</p>

<p><strong>For pizza dough:</strong></p>
<ul>
<li>2/3 cup lukewarm water      (105°F.-115°F.)</li>
<li>a 1/4-ounce package (2 1/2      teaspoons) active dry yeast</li>
<li>1/2 teaspoon sugar</li>
<li>2 tablespoons olive oil</li>
<li>1 3/4 + 1/4 cup, all-purpose flour, divided</li>
<li>1/4 cup finely ground yellow      cornmeal</li>
<li>2 teaspoons coarse sea salt</li>
</ul>
<p><strong>For pizza toppings:</strong></p>
<ul>
<li>your favorite pizza sauce</li>
<li>3/4 cup grated mozzarella cheese</li>
<li>1/4 cup chopped ham</li>
<li>1/2 cup chopped pineapple</li>
</ul>
<p>In a large bowl stir together half of the water, yeast, and sugar and let stand until foamy, about 10 minutes.</p>
<p>Stir in the remaining 1/3 cup water, 2 tablespoons oil, 1 3/4 cups flour, cornmeal, and salt and blend until mixture forms a dough.</p>
<p>Knead dough on a floured surface, incorporating as much of remaining 1/4 cup flour as needed to prevent dough from sticking and knead until smooth and elastic, about  5 to 10 minutes.</p>
<p>Put dough in an oiled deep bowl and turn to coat with oil.</p>
<p>Let dough rise, covered with plastic wrap, in a warm place for about 1 hour, or until doubled in bulk, and punch down.</p>
<p>Form dough into 4 balls.</p>
<p>Makes enough dough for four 10-inch thin-crust pizzas.</p>
<p><strong>To roll out pizza dough for grilling:</strong><br />
Lightly brush a baking sheet with olive oil.</p>
<p>On a lightly floured surface roll out 1 ball of dough 1/8 inch thick (about 10 inches in diameter).</p>
<p>Brushing off excess flour, transfer dough with your hands to baking sheet and cover surface completely with plastic wrap.</p>
<p>Repeat  with remaining dough balls, individual baking sheets and plastic wrap as above, ensuring that entire baking sheet is sealed with plastic wrap. Stack baking sheets on top of each other and refrigerate.</p>
<p><em>(Chill dough until firm, about 1 hour and up to 4 hours.)</em></p>
<p><strong>Grilling Pizza Instructions</strong></p>
<p>Heat up grill to medium high heat. Lightly oil racks and place dough on grill. Grill covered for about 3 minutes and turn 45 degrees.</p>
<p>Grill covered for an additional 1-2 minutes or until the bottom is crispy.</p>
<p>Turn dough over and quickly add sauce, ensuring to cover to the edge of the pizza. Add ham, pineapple chunks and cheese.</p>
<p>Cover the grill and reduce heat to medium low. Cook until crust is crispy and the cheese is melted, about an additional 4 minutes.</p>
<p>Transfer to cutting board and cut with a pizza wheel.</p>
<p><strong>Grilled Shrimp, Pesto, Mushroom and Artichoke Pizza</strong></p>

<p><strong>Ingredients</strong></p>

<li>Pizza Crust (from above)</li>
<li>Prepared pesto sauce</li>
<li>Mozzarella cheese</li>
<li>chopped black olives</li>
<li>sliced mushrooms</li>
<li>cooked shrimp</li>
<li>chopped red onion</li>
<li>chopped canned artichoke hearts</li>
</ul>
<p>Add the pesto sauce to the second side of the pizza dough. Add the desired amount of mozzarella cheese to cover. Top with desired amount of remaining ingredients.</p>
<p>Cook with lid down for 2-4 minutes or until the crust is crispy and the cheese is melted.</p>

<p>I would easily make this for company but instead of short ribs, which are wonderful and messy, I think I would make it as a pot roast and use a sirloin roast.</p>

<ul>
<li>2 Tablespoons olive oil</li>
<li>1 red onion, chopped</li>
<li>4 stalks celery, chopped</li>
<li>2 medium onions, chopped</li>
<li>4 garlic cloves, chopped</li>
<li>1 1/2 teaspoons curry powder</li>
<li>2 Tablespoons brown sugar</li>
<li>1 Tablespoon molasses</li>
<li>2 Tablespoons Worcestershire sauce</li>
<li>1 Tablespoon chopped ginger</li>
<li>salt and pepper</li>
<li>2 lbs. beef ribs, split individually</li>
<li>2 cups water</li>
</ul>
<p>In a large stock pot, heat olive oil over medium high heat and saute onion, red pepper, celery and garlic until tender, about 5 minutes. Add curry, brown sugar, molasses, Worcestershire sauce, ginger and salt and pepper, stirring until well combined.</p>
<p>Add beef ribs and stir to coat well. Add water to pot and cover with a lid. Reduce heat to low and simmer for 2 &#8211; 2.5 hours until meat is tender and falling off the bone and sauce is reduced and thickened.</p>
<p>Serve immediately.</p>
<p><em>Cook&#8217;s note: Substitute any beef roast for a tender pot roast.</em></p>

Repeated cooking will make meat crispy on the outside and juicy on the inside.</p>
